Your staple got a lot more expensive: Wheat prices have soared 22% in the month of February. Russia and Ukraine account for 26% of the global wheat supply which has come under heavy stress with the ongoing war. We pray for peace and the safety of the people during these times and hope that the situation can be resolved quickly
Another plant based milk: Dug Drinks, A Swedish company is going to give Starbucks another reason to charge 10$ for a cup of coffee by launching a new plant based milk made from potatoes later this year!
No more rice crispies: Time to move to Cheerios as Kellogs recently mentioned that they are facing severe shortages with their popular rice crispy treat because of supply issues it’s key ingredient - rice cereal. Their other products like Special K, Crispix, Vector, and Cracklin’ Oat Bran, are also struggling to meet demand
Recipe of the week: Citrus Arancini

I learnt a few things while traveling in Italy - the ideal time to have wine is between 12am - 11:59pm, cheese and honey is an amazing combination and you only need a couple of powerful ingredients to make unforgettable meals.
This arancini is made from a goat cheese citrus risotto. The acid (foodnetwork critique alert) cuts the fat beautifully to give an exceptional taste. Serve it with a tomato balsamic vinaigrette and you have yourself a total winner. For those of you who do not like deep frying, like myself, these arancinis are air fried but they can also be deep fried.
Meal Plan
Do you know what is the hardest question I’ve been asked? “What’s for dinner?” The daily struggle to decide is real. So we searched high and low for meals that are quick, easy and still not boring - at the cost of various late night hunger cravings!
This week we have a good blend of Indian, Italian and Asian flavors
Matar Paneer (peas & panner cooked in onion-tomato sauce): This is a classic Indian recipe. Can be made vegan by replacing paneer with tofu.
Spinach & Mushroom Lasagna: A healthy twist on the classic. Lasagna is usually great for meal prepping as you can freeze the tray for a later day (kind of rhymes!!)
Spinach Coconut Curry: Grilled tofu served in luxurious spinach and coconut curry. Served with rice.
Did you know?
Your taste buds get dulled at high altitudes causing airline food to be less flavorful. Is that why airlines provide only peanuts, pretzels and cookies?
On a samilar note, the Schiphol airport in Amsterdam has a special departure lounge, serving pre-flight meals to traveling cattle. Does that make cattle class the new first class?
Peppers, avocados and amaranths were being grown in the Americas as early as 8,000 B.C. The pepper in my fridge came shortly after that..cue, fridge cleaning day

Cooking Tips
Acids help proteins coagulate, so adding either vinegar or lemon juice to water used for poaching eggs helps keep the eggs from spreading out
To substitute red wine (cause you drank the bottle already) in food, use 1/2 cup of water and 2tsp of balsamic vinegar. Makes an equivalent of 1/2 cup of red wine
Keep apples cold - they lose flavor and crispness almost 10 times faster at room temperature. To all the doctors, time to crank up the room temperatures!
